Ah, lemon curd! The smooth, silky, sweet, yellow stuff you can do anything with, if you can keep yourself from eating all of it with a spoon right out of the jar!
My grandma made a divine lemon dessert that everyone in my family, heck, everyone who has tried it, loves. It's light, sweet, soft, and silky. The last time I made it, I realized that you basically start off with a very simple lemon curd.
Last night I was hankering for lemon curd bad. I wanted something sweet, but I couldn't think of anything I wanted except lemon curd. They sell it in the grocery stores, of course. A small jar goes for about five dollars. Ouch!
With three simple ingredients you already have and about a half an hour, you can have the same thing, without the long, slow grocery store lines!
Ingredients:
3 eggs
1 cup of sugar
Juice of 2 lemons
1 cup of sugar
Juice of 2 lemons
Directions:
* Juice your lemons. (If they've been in the refrigerator, microwave them for a few seconds to warm them up and get the juice to flow more easily.)
* Beat the eggs well. With an electric mixer, beat them for about a minute on medium.
* Combine the beaten eggs, sugar and lemon juice in a saucepan.
* Heat the mixture on medium, stirring constantly so it doesn't scorch. After about 5 minutes, the mixture should thicken to the right consistency (think: applesauce.)
* Take the mixture off the burner and allow to cool.
* Once cool, transfer to a glass jar and store in the fridge for up to a week or freeze for longer shelf life.
* Enjoy and try not to eat it all immediately!
I'm considering trying different things with this such as using half stevia for the sugar (its very sweet!) Or just using less sugar. I'll update when I do. Let me know if you try this recipe and how it turns out and whether you tried or suggest any changes!
